Cumbrian butcher to appear on Radio 4’s Kitchen Cabinet

Tebay’s master butcher Dave Moreland is to appear on BBC Radio 4’s flagship food programme this weekend.

Popular food programme the Kitchen Cabinet was recorded in front of a packed audience at Carlisle’s Old Fire Station earlier this month and will be aired on Saturday, April 29.

The popular panel programme is hosted by food critic Jay Rayner and includes food historian Annie Gray and chef and broadcaster Robert Owen Brown.   

Dave, who was born and bred in Tebay, is a champion of traditional butchery skills and has trained 10 fully qualified butchers locally, passing on his skill and expertise to the next generation of butcher.

Dave shared his insights and knowledge about the traditional Cumberland sausage, which received Protected Geographical Origin status in 2010, becoming the first ever regionally protected sausage. 

The status protects the integrity of this product and specifies 80 per cent meat content and specifies it be made in the county of Cumbria, which takes into account the old counties of Cumberland and Westmorland.

Dave, who is head of butchery at Westmorland Family, said: “It was an honour to take part in such an interesting and witty programme about food.

“Giving insight into our food heritage is important, it helps protect standards and places value on proper food, food made with care, skill, standards and integrity. The more value we place on the food we eat will result in higher standards for the industry.”

The Kitchen Cabinet will be broadcast on Radio 4 at 10.30am and repeated on Tuesday at 3pm.
