
A newly-opened butcher’s shop is to host a free masterclass designed to give chefs an insight into the owner’s ethos of nose-to-tail eating.
Eight local chefs will be invited for a tour of Roast Mutton in Kendal, after which owner Robert Unwin will give a practical butchery demonstration.
This will involve breaking down a whole beef carcass into its constituent parts and preparing specific cuts ready for sale in the shop, providing running descriptions of cut location and portioning.
Guests will then have an opportunity to chat to Robert, ask any questions, enjoy a glass of wine and sample some of the freshly prepared produce cooked on the barbecue.
Robert said: “I’m looking forward to having some local chefs come and take a look at what we do at Roast Mutton.
“As an ethical butcher Roast Mutton is all about sustainable farming and encouraging our customers to eat with thoughtfulness and care.
“By sourcing our meat from farms across the Lake District and personally knowing the farmers who rear the animals we buy allows us to supply the very best locally reared heritage and rare breed grass fed beef, lamb and mutton, as well as pork, poultry and carefully selected locally sourced game.’’
Places for the event, on September 27, are strictly limited and will be allocated on a first come first served basis.
